My lovely husband once sang this epic song for me. He’s a fairly good singer, you know.
And he’s a great chef in the kitchen. So, what would be more natural than to wish for a delicious meal somehow matching this song?
Surely, he wouldn’t reply: But I won’t do that. 😉
This meatloaf, wrapped in bacon and with a delicious filling, surely would have found the approval of the rock singer of the same name who, sadly, passed away three years ago.
As you can tell from the photo below, we need quite a lot of ingredients. But don’t let that scare you off from trying yourself. Actually, everything is pretty simple.

What we need:
For the meat
- 1000g (35oz) ground beef
- 3 eggs
- 1 red onion
- 1 white onion
- 1 tsp garlic powder
- 2 tbsp dried coriander leaves
- 2 tbsp dried dill tips
- 2 tbsp breadcrumbs
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp Italian herbs
- 1 tsp smoked paprika
For the filling
- 1 yellow bell pepper
- 1 red bell pepper
- 1 white onion
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp black pepper
- 150g (5¼oz) grated mozzarella cheese
- 2 tbsp dried chive rolls
- Olive oil
For the wrapping and the glaze
- 200g (7oz) sliced bacon
- 3 tbsp tomato ketchup
- 2 tbsp soy sauce
- 1 tbsp French mustard
- ½ tsp coriander leaves
How to do it:
- Crack the eggs and mix them well.
- Chop the red onion finely.
- Put the beef with the eggs and red onion in a suitable container, add the garlic powder, coriander leaves, dill tips, breadcrumbs, salt, black pepper, Italian herbs and smoked paprika.
- Use your hands to mix everything well.
- Chop the bell peppers and the white onion finely.
- Pour a little olive oil into a heated pan. Fry the well mixed peppers over low heat for 5 minutes.
- Add the white onion to the fried peppers, mix everything well. Fry until the onion is golden brown and the peppers have softened.
- Add the garlic powder, salt and black pepper, mix everything well, then remove from heat.
- Line a baking tray with baking paper. Spread the meat and shape it into a rectangle.
- Spread the filling over the meat but leave the edges empty.
- Sprinkle the mozzarella and the chive rolls over the filling.
- Grab the edges of the paper and roll up the meatloaf. Press down slightly on top.
- Remove the baking paper from the top of the loaf and seal its edges with meat.
- Fully cover the meatloaf with bacon slices.
- Cover the meatloaf with baking paper on top, press down slightly.
- Bake in a preheated oven for 50 minutes at 200°C (390°F).
- For the glaze, mix the tomato ketchup, soy sauce, French mustard and coriander leaves well together.
- Take the meatloaf out of the oven and brush the glaze all over on top.
- Return the meatloaf to the oven for another 15 minutes.

In Germany, “Erntedankfest” is significantly less important and is of religious origin. No wonder we missed it last Sunday. 🤣
