Tortellini Casserole

When I ask my lovely husband to whisper those three sweet words to me, his answer is: “Let’s bake it!” 😂

When we’re in the kitchen, that is. Otherwise, of course, not. Harry loves me as much as I love him. 💘

But when it comes to food, we both love almost all kinds of casseroles. 😋

Many simple dishes can be jazzed up by topping them with cheese and breadcrumbs and then baking them in the oven to create a delicious brown crust.

However, we deliberately left out the breadcrumbs this time because we thought that a crust too firm would not really suit this specific kind of casserole.

But, of course, this is a matter of taste.


What we need:

  • 500g (17¾oz) fresh tortellini from the refrigerated section – filling of your choice (we chose beef filling)
  • 200g (7oz) ham
  • 200g (7oz) cherry tomatoes
  • 100g (3½oz) mushrooms
  • 1 red bell pepper
  • 2 onions
  • 200g (7oz) whipping cream
  • 200g (7oz) sour cream
  • 1½ tsp vegetable stock granules
  • 2 tsp Italian herbs
  • 1 tsp lemon juice
  • ½ tsp sugar
  • ¼ tsp black pepper
  • 1 pinches of salt
  • ½ tsp garlic powder
  • Olive oil
  • 150g (5¼oz) grated cheese

How to do it:

  • Cut the ham into small dices.
  • Cut the cherry tomatoes in halves.
  • Cut the mushrooms in halves or quarters, depending on their sizes.
  • Cut the bell pepper in thin slices.
  • Chop the onions finely.
  • Cook the tortellini according to the instructions on the packet, then spread them evenly in a greased baking dish.
  • Spread the ham and the cherry tomatoes evenly on top of the tortellini.
  • Put the whipping cream, sour cream, stock granules, Italian herbs, lemon juice, sugar, black pepper and salt together in a container and mix everything well using a whisk.
  • Heat some olive oil in a pan and sauté the onions and garlic powder over medium heat for 2 minutes until translucent.
  • Add the mushrooms and pepper slices, cover the pan with a lid and sauté everything for another 3 minutes.
  • Add the vegetables from the pan to the container with the creamy sauce, mix everything well.
  • Pour the cream-vegetable mixture evenly over the tortellini.
  • Spread the grated cheese evenly.
  • Put the dish into the preheated oven and bake it for 30 minutes at 200°C (390°C).
